Goût neutre, texture, support fiable, mise en œuvre facile et polyvalence : pourquoi les fabricants d’aliments, de boissons et de compléments alimentaires en Europe utilisent la maltodextrine et comment choisir la bonne qualité.

Maltodextrin is one of the most widely used ingredients in food production, and for good reason. It is neutral in taste, easy to dissolve, simple to process and available in several grades for very different applications. This article explains why food, beverage and supplement manufacturers across Europe choose de la maltodextrine (CAS 9050-36-6), and what to consider when selecting a grade and a supplier.
Maltodextrin is a carbohydrate made by partial enzymatic hydrolysis of starch, in our case corn starch. The result is a white to slightly yellowish, free-flowing powder made of glucose chains of different lengths. The DE value (dextrose equivalent) describes how far the starch has been broken down: low DE grades have longer chains, are less sweet and build more body; higher DE grades dissolve faster and taste slightly sweeter.
Maltodextrin has a very mild, only slightly sweet taste. It adds body and solids to a recipe without covering flavours, which makes it ideal for delicate products such as beverages, dairy alternatives and flavour preparations.
As a bulking agent and thickener, maltodextrin gives sauces, soups, dressings and drinks a fuller mouthfeel. In reduced-fat products it helps to replace part of the texture that fat would normally provide.
Maltodextrin is the standard carrier for flavours, colours, extracts and other active ingredients. In spray drying it helps turn liquids into stable, free-flowing powders. Read more in our guide Maltodextrin as a spray-drying carrier.
Maltodextrin dissolves readily in water, mixes evenly in dry blends and has good flow properties. This makes it easy to handle in dosing systems, mixers and filling lines, from instant drinks to tablet production.
The same ingredient is used in bakery and confectionery, instant products, sports nutrition, baby food, food supplements and pharmaceutical tablets. One raw material for many recipes simplifies purchasing and stock keeping.
