How sodium bicarbonate works

  • Leavening: when heated or combined with an acid, sodium bicarbonate releases carbon dioxide, which makes doughs and batters rise.
  • pH regulation: as a mild alkaline salt, it neutralises acids and buffers the pH of foods and beverages. A 1% solution has a pH of about 8.3.
  • Effervescence: together with citric acid it produces the fizz in effervescent tablets, drink powders and sherbets.
  • Solubility: about 96 g dissolve in one litre of water at 20 °C.

Applications in detail

  • Bakery: baking powder blends with acid carriers, biscuits, crackers, gingerbread and cakes.
  • Beverages and effervescent products: effervescent tablets, instant drinks and sherbet powders, usually combined with citric acid.
  • Confectionery: aerated sweets such as honeycomb.
  • Food processing: pH adjustment in sauces, vegetables and ready meals.
  • Animal feed: feed additive in compound feed.

Frequently asked questions

What is the difference between sodium bicarbonate and sodium carbonate?

Sodium bicarbonate (NaHCO3, E500(ii)) is a mild alkaline salt used for baking and pH regulation. Sodium carbonate (Na2CO3, soda ash, E500(i)) is much more alkaline and is used for different applications.

How should sodium bicarbonate be stored?

Store it in closed bags in a dry, cool place, away from acids. Moisture causes lumps and reduces flowability.

Is sodium bicarbonate the same as baking soda?

Yes. Sodium bicarbonate, sodium hydrogen carbonate and baking soda are names for the same substance, NaHCO3 (E500ii).

Which grades do you supply?

Our standard is food grade sodium bicarbonate. If you need a different grade or particle size, please contact us.

Do you deliver outside Germany?

Yes, we deliver to customers across Europe.
